We are so excited to be joined by one of Chef Alyssa’s mentors and friend Chef Paul Verica! Chef Paul has been cooking in Charlotte for over 20 years and at the top of the country’s culinary scene! His restaurant Heritage Food & Drink in Waxhaw, NC has received national recognition and accolades including a pinnacle James Beard Nomination. In Spring of 2018, Heritage will relocate to the Elizabeth Neighborhood in Charlotte, off 7th Street.

Chef Paul’s food style is Locally Focused, Seasonally Driven. Through mastering many modern cooking techniques, he is able to heighten the flavors and textures of his ingredients and elevate the dining experience.

If you are wondering how can these techniques work to your benefit as a home cook, we will talk about lower waste, higher yield and saving time all while increasing flavor!

Together Chef Alyssa and Chef Paul will cover: Powders, Fluid Gels, Sous-Vide, Preservation and Balancing Flavors and Textures

In this workshop we will make a seasonal Appetizer, Entrée and Dessert to incorporate these methods.
